Gluten-Free Maple Ginger Pad Thai

For Meatless Monday this week, we’re cooking up a Gluten-Free Maple Ginger Pad Thai. It’s our healthy spin on the traditional Pad Thai and once you try it with the Maple Ginger Nut Butter you’ll never go back!

 

 

 

 

 

 

 

 

 

 

 

 

Ingredients:

Rice Noodles

1 Garlic Clove, chopped

2 tbsp Coconut oil 

1/2 cup Onions, chopped

2 heads of Broccoli, trimmed and cut into bite-size pieces

1 cup Mushrooms, chopped

2 tbsp Tamari

2 tbsp Maple Ginger Nut Butter

Directions:

Cooke rice noodles according to package instructions.

Heat oil and garlic in a large skillet at medium heat until fragrant and garlic begins to brown, about 30 seconds. Add chopped onions and saute for 2 minutes.  Stir in mushrooms, broccoli and tamari sauce and continue to sauté until desired tenderness is reached. Add cooked rice noodles and nut butter and stir until evenly coated.
