Mashed Acorn Squash

With Thanksgiving just around the corner, it’s time to start thinking about your dinner menu! For those who are calorie-conscious, you can eat this guilt-free. It’s low in calories, but more importantly, it’s packed with nutrients & fiber. Here’s a quick, easy and tasty way to cook acorn squash from purely elizabeth ambassador + founder of Thriving Lifestyle, Karla Chin.


1 acorn squash, halved and seeded
1 tablespoon coconut sugar
1 teaspoon coconut oil
1/4 teaspoon ground cinnamon
1/4 teaspoon salt


-Preheat oven to 400°F.
-Place squash halves cut-side down in the prepared pan.
-Bake until soft, about 45 minutes.
-Let cool for 10 minutes.
-Scrape the soft squash flesh into a medium bowl.
-Stir in the rest of the ingredients and mash with a fork until somewhat smooth.
