Quinoa, Lentil, Arugula Salad with Roasted Pears, Pecans + Goat Cheese

This sweet and savory salad is high in protein, thanks to the quinoa and lentils. Quinoa is considered a complete protein, it’s also high in magnesium, iron, copper and phosphorus. The mix of diverse flavors and textures make this an interesting salad for someone who’s not normally a salad lover. We finished the salad with a drizzle of lemon, olive oil and balsamic, a better option than store bought salad dressings, which are usually loaded with sugar and calories!
