Eggplant Parm Stack

Here’s a new way to enjoy eggplant–stacked with mozzarella and juicy beefsteak tomatoes and drizzled with balsamic vinegar glaze.

When choosing an eggplant, make sure it’s firm with smooth, shiny skin and no soft spots. Eggplants are a great source of dietary fiber, manganese and potassium. Have any leftover eggplant? Make homemade babaganoush!
